Monday's With Michelle: How To Be The Host(ess) With The Most(est) - Part 2

Last week we started talking about the beginning of football season and all the eats that come along with it. This week, we are going to delve into Salsa and Guacamole. No, not the crap in a jar or the premade tubs of stuff in the produce section, I’m talking about fresh, homemade, can-I-get-some-more-of-that, famous Chef Michelle’s Salsa and Guac. The best thing about these two yummy dips is that they are super easy to make, but always impress a crowd.

Let’s get started, here are the recipes.

Salsa

  • 6-7 Roma Tomatoes diced
  • ½ Red onion diced
  • ½ Jalapeño finely diced
  • 1 handful of Cilantro chopped
  • 1 tbsp minced garlic
  • ½ Lime juiced
  • Olive oil- just a drizzle
  • Salt/Pepper to taste (about 4-5 pinches of salt, 1 pinch of pepper)
*Side Note* How to dice a tomato quick: Slice the tomato in half (starting at the core and cutting through). Place one of the halves seed side down on your cutting board, first cut off the top ¼ inch of the tomato to get rid of the core, then slice thin strips lengthwise. Finally, Hold those strips together and slice across horizontally creating small diced pieces.*

Instructions:
  1. Mix all ingredients well and taste, add a little more salt and pepper if necessary.
  2. Serve with Tortilla chips.

Guacamole
  • 3-4 Avocados mashed
  • 1 Roma Tomatoes diced
  • ¼ Red onion diced
  • ½ Jalapeño finely diced
  • 1 handful of Cilantro chopped
  • 1 tbsp minced garlic
  • ½ Lime juiced
  • Salt/Pepper to taste (about 4-5 pinches of salt, 1 pinch of pepper)

Instructions:
  1. Cut avocados in half lengthwise and scoop out the flesh with a spoon and discard the seed.
  2. Mash the avocados with a fork or potato masher.
  3. Mix all the other chopped ingredients with the mashed Avocado.
  4. Taste and add salt and pepper if necessary.
  5. Serve with Tortilla chips.
