Mondays with Michelle: Fall Chicken Pot

As the temperatures cool I start to looking forward to more hearty "warming" dishes. My favorite this year is what my partner and I have dubbed, Chicken Pot -- or the most delicious, One-Pot braised chicken dish that you will enjoy this Fall. Check out the recipe below...







Ingredients:


4-6 pieces of Chicken (white or dark meat based on your preference)
1 onion quartered
1 pint mushrooms quartered
1 small bag baby carrots
1 small bag red potatoes quartered
32oz Chicken Stock
1 tsb Thyme
1 tsb minced Garlic
1 small bunch Parsley chopped
1 Bay leaf


Directions:

  • Preheat oven to 350 degrees Fahrenheit
  • Season chicken with White Spice
  • Add a few swirls of Garlic Oil to your Dutch oven or braising pot and bring to a high heat
  • Brown all your chicken pieces on both sides. Remove and place to the side.
  • Add additional Garlic oil to your pot, add onions and carrots-- allow to cook until fragrant
  • Add potatoes and mushrooms to the pot, mix well and season lightly with White spice, Thyme and Parsley.
  • Add the chicken back to the pot along with the bay leaf and cover with Chicken stock.
  • Cover your pot and place in the oven for 30-45 minutes or until vegetables are tender and stock has cooked down significantly.
  • Taste stock and season with White Spice again if necessary and remove the bay leaf
  • Enjoy over rice or quinoa.

Mondays With Michelle: Rain, Rain Go Away... Summer Salads Are Here To Stay!

Hello foodie friends!

I don’t know about you but this lousy gloomy weather has got me missing summer big time! What happened to beautiful sunny afternoons sitting outside on a patio enjoying a cool beverage and a delicious snack? Or summer barbecues? I know kids are back in school and that is the unofficial end to summer for lots of folks, but I’m not ready to let it go just yet!

One thing I love about summer is all the fresh, juicy, delicious produce that is available (we should still have a little bit left if the rain doesn't ruin it!). One of my new favorite summer dishes is a super delish and refreshing Watermelon Salad that I first tasted at Marlow’s during their “Red, white and Brew” menu. Of course I recreated at home because I loved it so much.

This summer salad is incredibly easy to make, and may just bring you some sunshine on these rainy days. Check out the recipe below.

Yummy Summer Watermelon Salad made by yours truly!


Ingredients:

¼ Watermelon cubed
2-3 handfuls Arugula
¼ cup Feta Cheese
¼ Red onions sliced
¼ cup basil chiffonade
1 Tbs Pickled ginger julienned
2 Tbs Balsamic vinegar
3 Tbs olive oil

Directions:

  •         Mix balsamic vinegar and oil vigorously
  •          Toss all ingredients in a bowl—mix lightly
  •          Drizzle vinaigrette over salad and toss lightly
  •          Enjoy!

Mondays With Michelle (Tuesday Edition): Suitable Sides

Hello foodie friends!

Do you ever stare into your refrigerator and wonder,
“What in the world am I going to make with the _____ tonight?” 
Doesn't matter if the protein is chicken, fish, beef or pork I am always looking for new side dishes to spice up our weekly meals. There are so many different fruits and veggies occupying the produce aisles, trying some new side dishes can change your whole meal.

Mondays With Michelle: Summertime Gelato Goodness

Happy Monday Foodie Friends!
I had to go back in time and dig out one of my favorite summertime posts, the Summertime=Ice Cream time post of course! Enjoy... it's delicious!

With summer officially upon us, now is the perfect time to share my favorite Italian Ice cream spot with you... Paolo's Gelato Italiano in the Virginia Highlands. It is the best ice cream in Atlanta. If you live in Atlanta, like I do and you haven't been, get there asap. If you plan on visiting, include this as a stop on your itinerary. It reminds me of the delish authentic Italian ice cream shops from my home town in Germany, and it doesn't get much better than that!


Paolo's servers over 62 fresh homemade flavors that change weekly (check out the list of flavors here). The even have a “Gelato Alert” that you can sign up for to get an email with the list of flavors that they will be serving for the upcoming  week. They have just about any flavor you can think of... Flower flavors like, Orange Blossom and Rose; Vegetable flavors like Avocado and Basil; and of course all the traditional cream and fruit based flavors like Chocolate, Banana and Strawberry (and many, many more). My absolute favorite thus far is their Pistachio ice cream. It is like heaven in your mouth. I’m not a huge fan of regular ol’ store bought pistachio, but this ice cream...you have to taste it to believe it.

They have kid friendly sizes and they are also open late, so it's a great place for a treat day or night. One thing I should mention though, is that they accept cash only... so make sure you hit the ATM machine on your way over there. I can't tell you how many times I've had to scavenge in my car and the bottom of purse for loose change to collect enough money for a small scoop of deliciousness. By the way, I don't work for Paolo's or anything, I just love it so much I think everyone should have a chance to indulge! Enjoy!

Mondays with Michelle: Valentine's Day


Happy Monday all!

Valentine's day is just a few days away, and at this point it's a little too late to make reservations somewhere. Don't worry though, you are in luck! There is nothing more romantic and sexy than cooking for your partner, so why not whip up a yummy meal for two? I shared some wonderful recipes from my anniversary last year that are perfect for this Love holiday. Take a look below...

Mondays With Michelle: High Vibration Foods


I had to reach out to my favorite foodie, Chef Michelle, once I realized she had disappeared. She'll explain it all below in her first, inspirational and informative post for 2013!

I know it has been a very long time, please forgive my absence  I started a new job at the end of last year and it has me zig zagging all over the world! A lot of exciting things have happened in addition to my new job, I got engaged  for one! Wooooo Hooooo! Anyhow, Happy 2013 to you all and I am very happy to be back!

January of each new year has people rushing to the gym and watching what they eat.. Going along with that theme, I thought I would share a post  that I guest blogged for Silencebeseen last year on High vs. Low Vibration Food. There is nothing wrong with a diet now and again, but maybe instead of depriving yourself you can try feeding your body some healthy, good-for-you-inside-and-out, high vibration food. Also know as, fresh produce. Check it out....
















You’ve heard the phrase, “You are what you eat”. We don’t take this phrase literally, but we should. Just think about it. How do you feel after eating a Double Cheese burger and french fries? Don’t get me wrong, I love a burger and fries just as much as the next person and I am by no means a raw food or energy guru. But after eating a burger and fries (as yummy as it is going down) I feel heavy, gassy, uncomfortable and completely lethargic. As if it has sucked the energy right out of me. This is the epitome of low-vibration food: foods that are processed and filled with pesticides, chemicals and preservatives.

Mondays With Michelle: Thanksgiving Edition

Happy almost Thanksgiving! Who doesn't love this time of year? Yes, it can be a little hectic (especially at the grocery store) but most people (myself included) look forward to this time every year. Weather its a small family dinner or a huge potluck, yumminess is always expected. 

My partner and I are planning on a very small group for our Thanksgiving fest, so instead of preparing a big bird, I am planning to do a spin on this delicious treat...

I think I am going to go with a cranberry sage stuffing instead of the cranberry apricot, but I will be posting photos of our fest on Instagram and Facebook so you will get to check it out as I put it on the table. 

There are a million different ways to prepare a turkey, but here are a few tips when it comes to cooking a whole bird.

Turkey Tips:
  • Brine! Nobody wants a dry turkey. Soak the bird in a mixture of water, salt and other herbs and spices overnight. (try this brining recipe.)
  • Everybody loves Crispy skin! After brining, leave your bird in the fridge completely uncovered overnight. The key is to let the turkey air dry. The less wet/moist it is the crispier the skin will get.
  • Season your turkey! Brush your turkey with seasoned butter: mix White Spice, sage and garlic with melted butter to add flavor. And don't forget to fill the cavity with lots of flavor; onions, garlic, sage, thyme, lemon and bay leaf or two. 
  • Don't overcook your Turkey! How to know when it's done: The best method is to use a meat thermometer. Insert the thermometer deep into the thigh meat (don't go too far and touch the bone). When it reaches 180 degrees and the juices run clear (not pink), your bird is done. (If you aren't making a whole Turkey, insert the thermometer into the thickest part of the meat)
  • After all that work keep your Turkey moist by letting it rest for 10-25 minutes after you take it out of the oven. You want the juices to settle, then cut.

I have been doing quite a bit of traveling over the last couple of weeks. Denver, Seattle, and then back down south to Destin for a quick weekend getaway. Travel for a foodie like me equals indulging in the local fare and of course lots of enticing food photos.

There are some very fun, very yummy events coming up this weekend that I absolutely have to share. What better way to get through the week (especially a rainy Monday) than to daydream about some weekend fun?




The first event is The Atlanta Greek Festival...

Tickets are only $5 and you can get $1 off if you purchase online here. (Tickets are for admission only, food items and other shopping are for sale.)

I have said many of times, I was definitely Greek in a former life because I just LOVE Greek food. It's flavorful and hearty and just down right YUMMY! This event is packed with Greek Culture-- Food, dancing, more food and more dancing! I love this event because it's not as over crowded as some. You can browse some of the vendors, buy some food then sit and watch some of the festivities.  The food is worth going alone, but if you have the courage you should join one of the many dancing circles that pop up while you are there. OPA!



The next event is the famous Taste of Atlanta...

Sunday, October 7: 11am - 6pm

Location
Tech Square in Midtown Atlanta (5th Street from Techwood to West Peachtree Street and Spring Street from Biltmore Place to Armstead Avenue.)

$25 for general admission (includes 10 taste tickets. Extra "taste tickets" can be purchased 10 for $10 or 20 for $20)

If you have never been to the the Taste, you should definitely go. It's a bit crowded and a tad overwhelming, but it is soooo much fun to taste food from so many different vendors. There is a whole list of over 80 great restaurants and other eatery's that will be present. You will find that your taste tickets will go quickly, but you can always get more. There are also several demonstrations and other fun things going on. Check out the schedule and have a great time!

Mondays With Michelle: DIY Foodie Projects

Happy Monday Foodie Friends!

I don't know about you, but I love a good Do-it-yourself project, especially ones that bring some extra yumminess to your kitchen (and save you some $)! And although it's a little early to be thinking about the holiday season, these two DIY projects also make for wonderful gifts for your foodie friends and family. 

Homemade extracts...


When is the last time you bought any kind of extract? It's expensive! Especially the good stuff. So for the cost of a bottle of vodka and some fruit/coffee/almonds or whatever flavor you like, you can have a ton of homemade flavored extracts for a fraction of the cost. Besides the cost, the possibly of flavors are limitless. The 2 pictured are grapefruit and lime. It is very simple to make, all you need is...
  • Your favorite Vodka
  • Your flavor of choice
  • Mason Jar
When making a citrus extract, let's say grapefruit for example, peel the skin/zest of 2 grapefruits (be sure not to have too much of the white pulp-- it's bitter). Next, drop the peel in a mason jar and cover with vodka. Finally, leave the peels in for 2-3 weeks to develop the flavor then remove them and store in a cool dry area. Your final product is good for 4-6 months and can be used like any extract that you bake with. For vanilla extract, use whole vanilla beans-- first split them open and scrap the bean, then cover with vodka (or rum) in a mason jar.

Infused Olive Oil....


This garlic infused olive oil is super easy to make, just add fresh garlic cloves (the more the merrier) and some of your favorite dried spices (I used parsley and red pepper flakes) to your favorite olive oil and you've got delish homemade garlicy olive oil! The dispenser is decorative and inexpensive, you can find them at Target, Ikea and Wal-Mart. I keep mine on the counter near the stove because I am constantly using it... and it's pretty to look at! Again, infused oil is much more expensive when you purchase it... make it yourself, you control the ingredients and you save some money!

Happy Labor Day, Foodie Friends!


The Labor day holiday signals the winding down of summer and the last of the barbecues for the season (unfortunately). So I thought I'd share with you a couple of yummy dishes that have popped up around the web to help you end your summer right... and let's face it, every holiday is better with some delicious food!
