Mondays With Michelle: Baked Tilapia With Asparagus

Happy Monday to you all! I hope you had a yumtastic weekend!

Time being of the essence, I thought I would share another quick, go-to meal with you. It’s not unusual for me to get home after 9pm during the week; this meal is for those nights. Especially since I just started working out with a trainer and drive thrus are no longer an option!

Baked Tilapia with Asparagus


Ingredients

  • 2 Tilapia fillets (or any mild white fish)
  • 4 slices lemon
  • 1 Tbs Olive Oil
  • 1 bundle Asparagus
  • 2 Tbs butter
  • Salt/pepper
  • Emeril's Essence or your own spice mix

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Asparagus, simmering.
  3. As you wait for the oven to heat, set a pot of water on the stove to boil for your asparagus.
  4. Rub the fish with olive oil and season with salt/pepper and Emeril’s/your spice mix. Place 2 lemon slices on each piece of fish and place on a foil lined cookie sheet.
  5. Bake fish for about 15-20 minutes (be careful not to over cook, the fish should be opaque and flaky.)
  6. While you wait for your fish to cook blanch your asparagus (drop asparagus in boiling water for 2-3 minutes, remove immediately and place in an ice bath.)
  7. Tilapia, baking.
  8. When your fish is about 5 minutes away from being done, heat a pan with the butter and add your asparagus (I use tongs to pull it out of the ice bath and drop it directly into the hot pan).
  9. Season the asparagus with salt/pepper while in the pan. Toss in butter until heated (a couple minutes should do—don’t over cook, otherwise it will be mushy)
  10. Once the fish is done, plate with the asparagus…. Don’t forget to squeeze the lemon on your fish, and enjoy!
