Mondays With Michelle: Rain, Rain Go Away... Summer Salads Are Here To Stay!

Hello foodie friends!

I don’t know about you but this lousy gloomy weather has got me missing summer big time! What happened to beautiful sunny afternoons sitting outside on a patio enjoying a cool beverage and a delicious snack? Or summer barbecues? I know kids are back in school and that is the unofficial end to summer for lots of folks, but I’m not ready to let it go just yet!

One thing I love about summer is all the fresh, juicy, delicious produce that is available (we should still have a little bit left if the rain doesn't ruin it!). One of my new favorite summer dishes is a super delish and refreshing Watermelon Salad that I first tasted at Marlow’s during their “Red, white and Brew” menu. Of course I recreated at home because I loved it so much.

This summer salad is incredibly easy to make, and may just bring you some sunshine on these rainy days. Check out the recipe below.

Yummy Summer Watermelon Salad made by yours truly!


Ingredients:

¼ Watermelon cubed
2-3 handfuls Arugula
¼ cup Feta Cheese
¼ Red onions sliced
¼ cup basil chiffonade
1 Tbs Pickled ginger julienned
2 Tbs Balsamic vinegar
3 Tbs olive oil

Directions:

  •         Mix balsamic vinegar and oil vigorously
  •          Toss all ingredients in a bowl—mix lightly
  •          Drizzle vinaigrette over salad and toss lightly
  •          Enjoy!

The Picnic: 10 Ways To Create Memories With Family

Summertime is known as “family-fun time” in my household. From the most frugal of city-planned events to the highest-priced excursions, you’ll rarely come across a weekend where there is nothing to do. Sometimes, however, the easiest way to spend intimate, memorable and quality time as a family is the age-old tradition of a family picnic. It can be as simple or extravagant as your preferences dictate.

My family picnics have always been more spur-of-the-moment outings. My wife and I grab everything we need from the fridge and garage, while stopping at a local grocery store to pick-up necessities we don’t have along the way. We stock our cars with blankets and load-up our Ziploc® brand Big Bags with frisbees, soccer balls and kites for the kids. If you’ve never gone on a family picnic or if you’ve gotten out of practice, below is a list of key necessities you’ll want to bring.


  1. A picnic basket. If you don’t have one, reusable shopping bags are a great alternative
  2. Napkins, plastic plates and disposable cups, forks, knives, spoons and straws. Be sure to recycle these after use, if possible!
  3. Outdoor games such as a soccer ball, football, frisbee, baseball and glove(s), a kite, a couple of bottles of bubbles or some variation of bubble making machines (these cost no more than $6 a pop)
  4. 1-2 blankets designated for outdoor use depending on the size of your family

When A Man Can Cook: Untruths And A Healthy Stir Fry #Recipe


Last month, I featured this picture on Facebook with a statement directed towards women about a man being a good cook being a man who will take care of you. Well, in retrospect this was a pretty ridiculous claim to make. A man who can cook is most certainly aware of foods, palettes and maybe even chemistry to a certain extent. He may be aware of his surroundings, especially if he is an organic farm to table kind of guy. He might even be conscientious about pleasing, impressing, satisfying, and/or catering to others. But none of the above qualifies what kind of father and husband a man will be. Through the opposite lens, the same goes for women too. A man who can cook is a great asset, no different than one who is handy around the house. But this is a feature, not the total package.

#INFOGRAPHIC: Food Waste By The Numbers


As the man of the house I do my best to mitigate food wastage in my fridge (the place where fresh food goes to die). Sometimes the wife and kids make fun of me, calling me curmudgeonly. But when you see the numbers above and do the math, it really isn't a laughing matter.

How to reduce food waste in your home:


  1. Eat the food you buy.
  2. Check your fridge before you go grocery shopping to keep your food and your money from going to waste. Unless you are shopping for non-perishables or for next week's backyard barbecue there really is no need to stock up on food you didn't eat after your last trip to the grocery store.

Mondays With Michelle: High Vibration Foods


I had to reach out to my favorite foodie, Chef Michelle, once I realized she had disappeared. She'll explain it all below in her first, inspirational and informative post for 2013!

I know it has been a very long time, please forgive my absence  I started a new job at the end of last year and it has me zig zagging all over the world! A lot of exciting things have happened in addition to my new job, I got engaged  for one! Wooooo Hooooo! Anyhow, Happy 2013 to you all and I am very happy to be back!

January of each new year has people rushing to the gym and watching what they eat.. Going along with that theme, I thought I would share a post  that I guest blogged for Silencebeseen last year on High vs. Low Vibration Food. There is nothing wrong with a diet now and again, but maybe instead of depriving yourself you can try feeding your body some healthy, good-for-you-inside-and-out, high vibration food. Also know as, fresh produce. Check it out....
















You’ve heard the phrase, “You are what you eat”. We don’t take this phrase literally, but we should. Just think about it. How do you feel after eating a Double Cheese burger and french fries? Don’t get me wrong, I love a burger and fries just as much as the next person and I am by no means a raw food or energy guru. But after eating a burger and fries (as yummy as it is going down) I feel heavy, gassy, uncomfortable and completely lethargic. As if it has sucked the energy right out of me. This is the epitome of low-vibration food: foods that are processed and filled with pesticides, chemicals and preservatives.

#WorkingOutAt40: Mission Accomplished?


I experienced a couple of snafus in the hours before my recent social media presentation in Las Vegas. One of them came about due to my lack of foresight, but more honestly lack of time, to iron the clothing I planned to wear on that Sunday morning. Instead I rifled through what I could find that didn't look like it had been slept in or simply, not ironed --- one of my favorite shirts and a pair of boot cut jeans I bought this past spring that are typically reserved for my high tops or boots.

Eh, nobody has time for all that, I thought as I forced everything into my bag and packed up all my camera equipment and electronics in order to beat the mandated check-out time of 11 a.m. and start talking at 11 a.m.

My presentation began at 11:20 am and all I wanted to do was sit at the edge of the stage and talk the way a lounge singer does when they get intimate with their crowd. My only problem was that I was in a grand ballroom and although the crowd was intimate they were all sitting comfortably in the back and I would've been out of sight had I sat down on the edge of the stage.

How To Use Dinner To Communicate With Your Teen

I often find myself frustrated with the glaring deficiencies in my teen son's ability to communicate --- what he's saying, what he means, where he is physically at. He says he'll be somewhere when he needs to be picked up but without being a psychic I know beforehand once I arrive he'll be somewhere else, or just not outside waiting for me. His plans with his friends are erratic and sometimes elaborate, constantly changing cluster-you-know-whats. We often play "Who's On First" because he claims he told me something I never heard him utter once. I often find him unaware of things that need to be done because he claims he never got that pertinent voice mail I left or text I sent. Lately, my mustache and goatee has been getting grayer and grayer.

But when I sit down and think about it long enough I really can't blame him. It's the thing that can't be pried from his hand that's mostly to blame for his, mine and nearly everyone else's often nonsensical way of communicating.

The technology of communication --- the very lifeblood that drives this blog --- the thing that came to make communication and connectivity easier, in the ever evolving ecosystem of communications and Social has created massive holes in effective and basic communication. How many times have you heard or said the following:

The #WorkingOutAt40 Fitness Challenge

This morning I got on the scale and it registered the number 186.5. That is a solid 10 pounds less than I was when I started back working out at the end of June. I've changed my diet, I've changed my level of activity (outdoor boot camp, biking, swimming and some running) and it in turn has changed my attitude, enhanced my vitality and helped me to calmly navigate through things that normally got me all twisted up in knots. Not to mention, pants that were cutting into my waist, fit once more and the protruding bulge beneath my that had become commonplace in all my shirts is now gone. My only complaint/issue/acknowledgment, etc. is that I am not the young man I once was. Thanks to my 40 year-old willpower I'm working out harder than I ever have. But thanks to my 40 years-old body, recovering from my workouts has become almost as painful as the workouts themselves. C'est la vie.

But I've got 10 more pounds to go. And I'd like to lose them by my birthday, which is exactly 6 weeks away.

And I challenge you to lose them (yours not mine) with me.

Mondays With Michelle: The Power of Juice

Happy Monday, and welcome back to Monday's with Michelle! In case you are wondering what happened with my Half Marathon that I mentioned a while back... I did it! It was last weekend and I finished and I am still alive and kicking. :-)


Today, I want to talk about Juicing. Juicing is basically, taking  whole bunch of fruits, veggies and herbs and running them through a juicing machine to extract all the juice to create a delish concoction chocked full of nutrients in liquid form. Some people do this for the purpose of fasting, to replace meals, and some just to have Clean, Fresh, Yummy juice.

I started juicing a while back after seeing the documentary, Fat, Sick and Nearly Dead. I started having juice in the morning since that was the meal I was missing the most anyways and its  great way to start the day. I have to say I love it! You can mix any combination of fruits and veggies that work for you. Check out my favorite "green" juice..

Mondays with Michelle: Arroz Con Pollo

Here's another "In case you missed" it from my Foodie Blog. This one is about preparing a healthier version of one of my favorite Puerto Rican dishes Arroz Con Pollo... enjoy!

Tonight's  plan for dinner is one of my childhood favs, Arroz con Pollo (chicken with rice). I picked up some chicken legs the other day (since they were on sale at Kroger) with this dish in mind. I've experimented with this fav a ton, I've made it in the traditional one-pot fashion, I've tried half rice cooker/half stove top, I've added pigeon peas (yum), I've tried a more Spanish style and cooked it in the oven... like I said, I've experimented a ton and it has all be delicious.With my recent weight loss efforts I decided that I would change this recipe a little bit to make it as figure friendly as possible. In order to do that, I decided to use brown rice instead of white rice. Keep in mind this changes the dish quite a bit because the texture of brown rice is different than white rice, but that doesn't mean that it can't be just a flavorful.

Mondays (Tuesday) with Michelle: Junk food Fix...the Clean version!

Pizza is one of my favorite splurge junk food fixes, as it is for a lot of you I'm sure. What if you could make a super yummy, non-cardboard tasting version of it? And even better a CLEAN version?

All together, the process took about 40 minutes. I made a whole wheat crust with lots of yummy herbs and seasonings, then I added some fresh, organic chicken sausage, lots of fresh veggies, organic sauce and cheese...super easy, super yummy, Clean Eating Pizza!

Mondays With Michelle: My New Vegetable Obsessions

              

I haven't always loved brussel sprouts. In fact, as a kid, I hated them. Completely despised them. So much so, that I didn't eat a brussel sprout again until last year. 

True story. 

The foodie in me realized how much I had been loosing out and I finally picked up a bag from the farmers market. I brought the little green cabbage balls home and proceeded to trim them, cut them in half, lather them with olive oil, season them up and pop them in the oven to roast. What I got was the the MOST DELICIOUS little vegetable ever. I had NO idea what I had been missing.... all because of a childhood phobia. I have been eating them non-stop since.

My most recent vegetable obsession that I added to my beloved roasted brussels sprouts is butternut squash. Who knew that funky looking winter squash was so freaking yummy?! I have had butternut squash before, specifically in the form of the popular winter soup, but it's not a vegetable that I've had much experience with. So this past week I tried roasting some with my brussels sprouts and it was just delicious!

This is a perfect example of tip #8: Try something new (from my New Year's resolutions post). Something new doesn't necessary mean some exotic fruit or vegetable, just something you don't normally eat or like me hadn't eaten in a really long time or never experimented with on your own.

You are welcome to partake in my brussels sprouts and butternut squash obbesion, below is the reciepe for the roasted goodness shown in the photo above. 

Roasted Brussels Sprouts and Butternut Squash

Ingredients:

1lb brussels sprouts
1 medium butternut squash
2 Tbs olive oil
White spice to taste

Directions:
  • Preheat oven to 400 degrees
  • Trim brussels sprout stems and remove any discolored outer leaves. Cut each one in half
  • Peel, seed and dice squash (Put the squash in the microwave for 2 minutes to soften up the skin to make it easier to peel with a vegetable peeler.)
  • Toss sprouts and squash with olive olive and season generously with white spice
  • Place vegetables on a baking sheet and allow to roast for 30-35 minutes or until golden brown and tender. (I like to give it a quick toss again about half way through the cooking time to make sure it is browning evenly.)
  • Serve with your dinner of choice and enjoy!

Mondays with Michelle: Salsa Time

Welcome to Monday's with Michelle! This week I want to share some yummy (and healthy) salsa recipes with you in an effort to make your meals even more delicious without adding a ton of fat or calories.


As I mentioned last week, one of the biggest misconceptions with eating healthy is that "diet" food has to be bland and boring. First, it's not "diet" food, so get that out of your head. It's just a cleaner healthier version of the same old stuff we've always had. 

Back to the salsa... 

It's not just for dipping tortilla chips in. It's amazing served over just about any thing. Well, it's amazing period, I could eat it with a spoon...but that is not the point here. Think of it as a condiment. The Spanish word 'salsa' literally translates to 'sauce' in English. So ditch the idea of it being a dip and try it as a sauce.

I shared my famous tomato salsa  recipe with you a while back, during part 2 of my "Host(es) with the Most(est)" series. This time instead of serving it with a bag of chips spoon some over grilled chicken breast. It's delish. I promise.

Salsa doesn't stop at the traditional tomato variety either, there are tons of combinations to try.  Another one of my favorites is Black Bean Mango Salsa. This one is delicious over more spicy proteins, like spicy shrimp skewers or jerk chicken. The sweetness of the mango's compliments the spiciness perfectly.

Mondays With Michelle: New Year's Resolutions

Happy New Year!! Welcome back to Monday's with Michelle! Another holiday season has come and gone and a new set of New Years resolutions have been pledged. As always, some of the most popular new year's resolutions are to loose a few pounds and to eat healthier. 

What were your new year's resolutions? 

Even if eating healthier wasn't apart of your 2012 plan, I think we can all use a few tips to make better choices with our food. Here are few things that I have come up with to keep 2012 healthy:

  1. Shop only the perimeter of the grocery store: You will notice that produce, meat, seafood, dairy products and other "clean" foods are found around the perimeter of the grocery store. (With the exception of  a few items such as, nut butters, grains and healthy oils.) These are the food you want to stick to. Stay away from the processed, prepackaged, microwaveable crap in the center aisles. 
  2. Eat colorful: Try to have more that 2 colors on your plate for dinner. The more colors, the more nutrients you are getting from your meal. For example, grilled chicken with salsa (red) and grilled zucchini(green) and squash (yellow).
  3. Drink water: This is a oldie but goodie, try to get your recommended 8 glasses (64 oz) of water a day. It keeps you full and regular... nuff said. 
  4. Replace white with something healthier: Most health gurus will say to choose whole grain, and of course that is the best and healthiest option, but the reality is, a lot of people don't care for the taste. So, for rice, try brown rice instead of white, but cook it in an unsalted chicken stock for yummy flavor and try cooking it in a rice cooker for a better consistency. For pasta try spinach spaghetti from whole foods. For bread go to the bakery at your local grocery store and look for fresh baked whole wheat bread, it may cost a dollar or two more, but it always tastes better than the stuff in the bread isle. For your baking needs try King Arthurs Unbleached White Whole Wheat Flour, it is made from a different wheat, hence the "white", but believe it or not it is natural and it can be used interchangeably with regular all purpose flour.
  5. Eat Clean, Real food: Clean, Real food is anything that was grown in the earth (trees, plants, roots, etc.) or had a Mom at some point (according to Jillian Micheal's). Just to clarify, Cheetos were not grown in the earth, nor do they have a Mom.... the factory that they were processed in does not count as it's mother by the way. I get that it may not be realistic to give up your favorite bad processed snack, but the point of this is to try to limit it and make up for it by eating as clean as possible the rest of the time. 
  6. Use healthy cooking techniques: Baking, poaching, blanching, steaming, broiling, grilling... there are tons of options, stay away from frying and using tons of fat. 
  7. Don't deprive yourself: Deprivation leads to binging and binging leads to a downward spiral. Here is something great I read from Bethany Frankel of "Skinnygirl",  "No one ever got fat because of a cookie or a slice of pizza. Don’t beat yourself up if you have something you like that’s not on your diet. Don’t let a splurge derail your commitment to staying healthy. Don’t deprive yourself of a treat every once in a while." 
  8. Try new foods: I can't tell you how many times I have heard people say, "I'm so sick of eating boneless skinless chicken breast and broccoli everyday." First thing, eating healthier does not mean you have to eat bland, boring, "diet-food".  It just means you have to be more creative in what you chose to eat. Tired of chicken? Try some lean pork.  Or just try making your chicken a different way.  Walk through the produce section and pick up a vegetable you have never even seen before, or maybe something that you hated as kid, then take 5 minutes to research ways to cook it. You'd be surprised. 
Don't fall into the new year's resolution trap this year.  You know, the one where you have forgotten all about your resolution before February hits? These are simple tips that you can use all year round for your whole family to make better decisions about the things we put in our bodies.  Start your kids off young, let them help "pick colors for dinner" (see tip number 2). Mondays With Michelle: Thanksgiving Recovery


Welcome to Monday's with Michelle! I hope you all enjoyed your Thanksgiving. I certainly did! I cooked up a storm (and we are finally rid of all the leftovers), you can check out all the dishes I cooked up over on my Thanksgiving post on my Foodie Blog.

I don't know about you, but after the traditional thanksgiving food induced coma, the last thing I want to eat is another heavy meal.  So, today I thought I would share a delicious, light fall salad.

This is a really simple, quick salad with spinach, arugula, candied walnuts, dried cranberry, goat cheese, onions and homemade balsamic vinaigrette. I love the bite of the the arugula mixed in with the sweetness of the walnuts and cranberries, and you can always add some grilled chicken if you are missing the meat. It really is yummy. The homemade dressing is super easy to make as well, check out the recipe below. 


Balsamic Vinaigrette


Ingredients:


  • ¾ cup olive oil
  • ¼ cup balsamic vinegar
  • ½ shallot diced
  • 1 tbsp Dijon mustard
  • a few pinches White Spice

Instructions:

  1. Whisk vinegar and mustard in a small bowl.
  2. Add in diced shallot and a few pinches of White Spice
  3. Whisk oil in a slow steady stream until fully incorporated
  4. Taste and and adjust seasoning if necessary.
  5. Enjoy over your salad or even use as a marinade!

Today, I have for you a spin on a classic: Chicken Wings! They are usually fried and covered in some type of finger licking sauce (which I love by the way). But in an effort to be a tad more health conscious I have taken to baking them.

A Family Of Four & Forty Pounds Of Chicken

Last week I picked up the largest order of chicken I've ever laid eyes on --- forty pounds of free range chicken breasts courtesy of Zaycon Foods. After excitedly getting all this chicken thanks to a connection from a fellow blogger, after dragging this big box of juicy poultry into my freezer in the garage the question that begged to be answered suddenly popped into my head:

What on Earth am I going to do with forty pounds of chicken?
