Mondays With Michelle: The Hos(ess) With The Most(est) - The Finale
Happy Labor Day To All! We’ve made it to the 3rd and final installment of Hostess with the Mostest. The goal was to give you some delicious football season snacks to WOW your guest at all your Football gatherings.
We started with a tasty alternative to the standard chicken wings and did Mediterranean Chicken Skewers with a Greek Yogurt dipping sauce. Then we dove into the classic delicious homemade Salsa and Guacamole.
This week, for our final dish I am going to share my secret recipe for the best spinach dip EVER.
Here is the recipe…
Spinach Dip
- 1 bag fresh spinach
- 8oz Sour Cream
- 8oz Cream Cheese
- 5oz Parmesan (the fresher the better… buy a block and grate it yourself!)
- 5oz Manchego Cheese (Find it at local grocery stores, but Dekalb Farmer’s Market has the best price. This one will have to be purchased by the wedge and shredded at home.)
- 1 Tbs Olive Oil
- 1 Tbs Old bay
- Salt/White Pepper to taste
Crostini
- 1 French baguette
- 1 tsbp minced garlic
- ½ paprika
- ½ dried parsley
- ½ onion powder
- ½ garlic powder
- ½ cup olive oil
Instructions:
- Preheat your oven to 350 degrees.
- In a pot over medium-low heat add sour cream and cream cheese, mix and allow to heat until melted.
- While you wait for the sour cream and cream cheese to come together grab a sauté pan and heat the olive oil over medium heat and drop the spinach in, be sure to sprinkle with salt and pepper—toss until cooked (2-4 mintues).
- Once the sour cream and cream cheese is melted add the shredded parmesan and manchego cheese. Mix thoroughly to incorporate.
- Once the cheese is incorporated add your sautéed spinach, mix well
- Season with old bay and salt/white pepper—be sure to taste and adjust seasoning as needed.
- For the Crostini, slice baguette into slices
- In a shallow bowl mix all the spices/herbs and the olive oil
- Dip each slice of bread in the mix coating with olive oil and spice mix
- Bake in oven for 6-8 minutes until golden brown
- Serve along side the Spinach dip for dipping and enjoy!
