Mondays With Michelle: Banana Muffins

Welcome to Monday’s with Michelle! Today, I’ve got a great banana muffin recipe that I want to share. This is one that I’m sure we can all use. I can’t tell you how many times we buy bananas in my house with intentions of eating them before they turn brown and mushy, but sometimes we’re just too slow and we’re left with extra ripe bananas that no one wants to eat. Don’t throw them away! Turn them into the most delish banana muffins ever.

This recipe is super easy to whip up in just a few minutes; it doesn’t even require a mixer, just 2 bowls and a fork. Here’s the recipe:

Banana Crumb Muffins (adapted from Allrecipes). Makes 6 large muffins.




Ingredients:

Muffins:
  • ¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 ripe bananas
  • 6 Tbs white sugar
  • 1 egg, lightly beaten
  • 2 ½ Tbs melted butter

Crumb topping:
  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter


Instructions:

  1. Preheat oven to 375 degrees.
  2. Mix flour, baking soda, baking powder and salt in a medium sized bowl.
  3. Mash bananas in a small bowl with a fork.
  4. Add the sugar, egg and melted butter to the mashed bananas.
  5. Add the banana mixture into the flour mixture and stir with your fork until just incorporated.
  6. Spoon the batter into your paper lined muffin pan about 2/3rds full
  7. Next for the crumb topping mix the brown sugar, flour and cinnamon.
  8. Incorporate the butter with your fingers until mixture resembles coarse cornmeal.
  9. Generously sprinkle the topping over muffins.
  10. Bake for 18 to 20 minutes.

These muffins are great for breakfast, or just a little snack. Your kids and significant others will love them. Not to mention that they make your kitchen smell amazing! Personally, I think they are best right out of the oven. They have the most satisfy crunch from that absolutely decadent crumb topping. Keep your leftovers (if you have any) in an airtight container on the kitchen counter and just pop them in the microwave for 10 seconds when you are ready to eat them.
