Mondays (Tuesday) with Michelle: Junk food Fix...the Clean version!

Pizza is one of my favorite splurge junk food fixes, as it is for a lot of you I'm sure. What if you could make a super yummy, non-cardboard tasting version of it? And even better a CLEAN version?

All together, the process took about 40 minutes. I made a whole wheat crust with lots of yummy herbs and seasonings, then I added some fresh, organic chicken sausage, lots of fresh veggies, organic sauce and cheese...super easy, super yummy, Clean Eating Pizza!

First you have to start with the crust:

Herb Infused Whole Wheat Pizza Crust

Ingredients:


2 cups + 2 Tbsp King Arthur Unbleached White Whole Wheat Flour
1 tsp White Spice
1 1/2 tsp baking powder
1 tsp garlic powder
1 tsp dried oregano
2 tsp italian seasoning
1 1/2 Tbsp olive oil
1 1/2 Tbsp water
1 organic egg lightly beaten
2/3 cup organic rice milk (use regular organic milk if you prefer)

Directions:
  • Preheat oven to 400 degrees
  • Mix 2 cups of flour (reserving 2 Tbsp for later), baking power and all spices in a mixing bowl.
  • Add in olive oil, water, egg and rice milk 
  • Sprinkle some of the reserved flour on your pizza pan and roll out the dough.(use additional flour to prevent sticking when rolling out) Once rolled out press dough out to form the pan with your fingers.( I used a 16" pizza pan)
  • Bake crust in preheated oven for 8-10 minutes.
  • To save time you can make the dough ahead and refrigerate for up to 2 days before baking.

Now that you have your Crust done, you can create your own homemade pizza!

Chicken sausage and Veggie Pizza

Ingredients:

1 pound organic chicken sausage
1 cup orgainc mozzarella cheese
1 green pepper sliced (julienne)
1/2 red onion sliced (julienne)
4-5 medium mushrooms sliced
1/2 cup organic tomato sauce
1 garlic cloves minced
White spice to taste

Directions:
  • Preheat oven to 400 degrees.
  • Precook (season with white spice if necessary) sausage and set to the side. 
  • Season tomato sauce with garlic and white spice then spoon over pizza crust.
  • Sprinkle 3/4's of the cheese over the sauce.
  • Layer sausage and veggies over the cheese then top with the remaining cheese.
  • Bake in oven for 12-15 minutes or until golden brown.

Now you can have you cake pizza and eat it too! I hope you and your family enjoy this delicious and healthy recipe. Remember you can always change up the toppings to make them more kid friendly, try a turkey salami and tomato slices for a spin on a pepperoni pizza.
